Well I was saving talking about this until I got my build a bit nearer completion, but basically I'm working on EXACTLY this.

I have the code for the reader already done and you can see it on my github:
https://github.com/abrugsch/GBCartSlurp
it reads carts, dumps the rom and the savegame SRAM all handled natively by the Pi. It just needs a pair of I2C mcp23017 port expanders to work, but I only have it on breadboard ATM.
the bit that's holding up the project is designing a custom PCB for it...

well running programs is just starting lr-gambette with the ROM it just dumped ;)
My plan is to have it so that when you boot the pi, if there's a cart present, then it will go straight to the dumping and then launch gambette directly, skipping emulationstation altogether. So it should look just like an OG gameboy, with maybe a bit more time to dump the rom....

Love it.

For me, I just added an entry to the RetroPie Menue, right after the GBC item, there is a "Load cartridge" entry that will do the stuff.
If there's no cartridge to dump and load, it just does not do anything, otherwise it will use the right emulator to load the ripped ROM.

interesting stuff on the video, but those 2 additional controllers would make it almost impossible to fit even in DMG case i think?
also question: how much is that "abit more time to dump.."? have you dumped any really games and can give any numbers on that?
