Depends on your needs. If you're going to use it a few times for your build then a regular Radio shack style no temperature control pencil soldering iron should be ok. If you have other electronics hobbies like quadcopters or ham radio then you might want to spend a bit more and get one with tempera...

Don't let an expensive Tinkerboy board be your first attempt at soldering. Find some broken electronics and practice de-soldering and soldering it's through-hole components first. Or get a cheap ebay electronics kit on ebay for practice. Or practice solding resistors to perfboard.

Any inside layout pics? I'm considering going the common ground route(I'm cheap) but I'm a bit concerned about ending up with an overstuffed Nintendo burger oozing wires and hot glue

You could also boot a windows computer into a version of linux on a thumb drive. This is a useful skill to have anyway in case windows crashes or gets infected. Once in linux you will be able to read your SD card

What I have not seen, is soldering a teensy/promicro, directly. other than some complication with the USB connectors, this seems like a good way to avoid some wiring. I had much the same idea as you.
