You could also add a switch to the live power cable in the usb cable to the WiFi dongle, so you can turn the WiFi off and on and have it in the battery compartment.

When you say remove do u mean uninstall or just hide them from the retropie menu? To uninstall you have to use the retropie setup script that can be found in the retropie page. Try going through the retro arch quick menu, then options, and changing input buttons to 6 button. This will help for games like mortal kombat and street fighter. I don't think you would find a 2.8 composite screen that would fit, I've been looking and have been unable to find one. If I was going to build this I would use a bigger screen and scale it down in the software.
