When will the next batch of screens be ready to order, I'm putting together all of the things for the mintyPi, and all I'm missing is the screen, so I'm just wondering when I can order it.

you can order any 2.4" ili9341 screen. Do you have a screen board and button PCB, or are you planning to do this with a homemade PCB?

Helder will be releasing the v3 minty pi sometime, but the V2 will not be sold again if that's what you're needing. The V3 will likely need all new 3d parts etc...

if you order a bare screen you will need an adapter board like this, and will have to wire it to the pi with 8 individual wires,

You can also use something like this, but the board will need to be trimmed down, and will be more of a challenge to fit, but you will not need a seperate adapter board:
