SNES and General Performance Confusion

Heyo,
Whenever Wermy shows footage of RPi0-based setups, footage of the SNES gameplay contrasts with how my mintyPi has been cooperating.
All of the SNES games I've played around with have been running very poorly and games as a whole tend to have decent input latency (this might just be an inherent part of the screen being used).
I've been sure to turn off bluetooth and wifi during play and tested out each emulator that comes with the system. I'm a little confused about the role of VRAM (limit setting in the RetroPie menu) in performance. I know I had some rework/soldering problems on my mintyPi, so the general threat of heat damage is always possible. Retroarch seems to have plenty of settings available, but there's a lot to grasp there and not many options to reduce features without emulation glitches.
My mintyPi works great for GB and GBC and okay for GBA [with a bios], especially with titles that don't require too much timing-oriented gameplay [platformers], but the opportunity to smoothly play SNES games on the go would be awesome.
Anyone have any tips/suggestions for getting my Pi up to snuff in terms of latency and/or SNES consistency?
