There is a setting in retroarch to turn on/off screen smoothing. Turning it off makes it look a lot better in my opinion (more authentic) and makes text a little easier to read.

You can do this by editing /opt/retropie/configs/all/retroarch.cfg
and changing the line that says
video_smooth = true
to
video_smooth = false
