In the Gameboy modding community, a popular screen of choice is the "Super OSD Retro Pixel" Q5 IPS display [0].

For a Gameboy Zero build, does it look like it would be possible to interface this with a Raspberry Pi?

It can be done, but the current MIPI-HDMI conversion boards are too expensive, don't offer brightness control, and consume too much power
