Can i bring my gameboy zero with me as a carryon for a flight or will TSA snatch it from me?

It can be risky. If they decide to examine it they could ask you to turn the device on (no problem there). If the device is messy on the inside it wouldn't suprise me if they'd want to open it -- in a very extreme case. Its quite possible to see through the X-ray machines whether the gameboy is homemade or not, really depends on how messy it is on the inside.

I don't think the TSA can just snatch it from you (unless you can't dispose of it yourself). I've worked this job in my country here in europe and you always have the option to go back and put your bag in "check-in" with your gameboy in it.

I personally wouldn't take my gameboy through security (like TSA) -- but the choice is yours.
