I've picked up a battery that doesn't have a JST connector on the end of it, it just ends with a red and black wire. Would it be safe to get a 2 pin JST cable and solder the ends of those wires onto the ends of the wires from the battery (essentially an extension) and then wrapping electrical tape around them?

Yes,
be sure to use same size wires or bigger size wires than battery itself.
Be careful when works with batteries,don't create a short circuit.
Instead of electrical tape, you can use heat shrink tubes for more durable and clean job.
