Cut the cables with a pair of wire cutters to expose all the wires and use those to solder. I was an idiot and desoldered everything off the board thinking I could resolder it back later. This has been the hardest part of the whole project for me to finely solder these wires back on. Dont' underestimate how hard this is. I spent 3 gruelling hours last night, and I only have 1 port functioning so far. Almost ready to just go buy a new one but I'm this far, I might as well keep going. Phew
Interestingly enough, I had the opposite experience. I found that a couple of my USB ports from the octopus did not work to start with - they had terrible cheap cold solder joints from the manufacturer that were not making good connections and had frayed wires. I replaced the wiring on one or two and for the others, I re-flowed and added solder to the connections. As with all off the shelf stuff that is not made for projects, be careful with the pads, as they will come off if you are not careful. I had that issue with my DAC.
