Nooby question....how do I get to /boot/config.txt?

You can either plug a keyboard into your pizero and boot it, then when in emulationstation hit F4 and type:

sudo nano /boot/config.txt

Or plug your sd card into your pc and config.txt is on the root of the sd card.
