Can I apply also double sided tape to the fan like with the heatsink to attach the fan to the CM3?

I did on mine and seems to be working just fine. I cut thin 2mm strips, I then stuck 3 to 4 on top of each other to thicken them up and then used them to stick down the left and right outside edges ... worked a treat for me.

Could either of you guys post some close ups of how you did it?

I’m very unclear on the placement of the fan.

Does the airflow come out the side of the fan?

It’s not actually a “fan” but a blower instead.
Yes, the air is going from up to the side.
You can put it with double sided foam, double sided tape, vhb, or even thermal pad as long as it’s double sided and sticky. You can also use hotglue but it would look like scrap lol.
The fan should blow as close as possible to the heatsink for better cooling.
